Production

The agave plant is grown for a period of 4 to 8 years until it becomes mature. At the time of the harvest, the "Jimador" cuts off the leaves of the Agave, leaving only the core or "pina". The core is crushed to obtain the sap of the plant which is a sweet juice.

This juice, which is rich in inulin, is filtered and then spray-dried to produce a fine white powder.

What are prebiotics?

Prebiotics are not any type of bacteria like probiotics. Prebiotics are the food nutrients that feed the good bacteria in our body.  Keeping healthy gut bacteria in balance is the key to a healthy immune system.

If I want to take inulin as a pre-biotic, how often and how should I have it?

Start with a teaspoon diluted in a glass of water once or twice a day along with your food. You will notice some flatulence during the first week or so due to modification of your intestine flora. This effect will eventually disappear.

Can I use inulin for baking?

Yes, although it will not work as a flour substitute. It can help you thicken your food preparation. Inulin is a spray-dried product and thus it will absorb water quickly. Store well closed because it will harden with humidity.

The best way to store the product is in a cool dry place. Avoid humid conditions. This product is highly hygroscopic.
