During the manufacturing process the cacao paste is liquefied and hence it is also called cacao liquor. - Despite its name there is no alcohol present.
Cacao Paste is also known as: unsweetened chocolate, baking chocolate or bitter chocolate. In Canada and Europe, other names include cocoa mass and cocoa liquor.
