What you'll need (makes 8-10):
The cups:
2 Bananas
1-2 cups of oats (base on consistency)
The filling:
6-8 soaked dates
1 cup of cashews
1 cup of coconut
2 Tbsps of Peanut Butter
2 Tbsps of our Freeze-Dried Raspberry Powder
Topping:
1 cup dark chocolate
1 Tbsp of Coconut Oil
Sprinkles of our Freeze-dried Raspberry Crumble
How to make them:
- Place the dates into a bowl, cover with hot water and set aside for 5 minutes.
- In another bowl, squish the bananas until mushy and pour the oats on top. Then mix together.
- Grab a muffin tray, and place the banana oat mixture into the cups. Top tip: push the mixture up the sides to create a whole in the middle for the filling!
- Place the muffin tray in the fridge to set while you move on to the filling.
- Grab a blender, place the soaked dates, cashews, coconut, peanut butter and Freeze-Dried Raspberry Powder into the blender and mix it all together.
- Retrieve the muffin tray and spoon the filling into middle of the banana and oat cups.
- Once again, place the muffin tin back in the fridge while you create the topping.
- Grab another bowl, pour in the chocolate pieces and spoon in the coconut oil. Place in the microwave to melt.
- Pour the melted chocolate on top of the cups, and finish them off with a sprinkle of our Freeze-dried Raspberry Crumble!
- And lastly, place the cups in the freezer to set. Will be ready to eat within 1-2 hours!
